I left the onions whole, and I cut the rest of the vegetables into larger pieces.

I put the chicken cutlery and fat to boil, and when it stopped frothing, I put the vegetables and cooked for about 20 minutes, then I added the noodles and adjusted the taste with salt. At the end, I added chopped parsley.

Goose meat - thighs, breast, cutlery - to choose from
4 large carrots
1 parsnip root
1 thick slice of celery
2 large onions, 1 clove of garlic
salt - to taste
100 g of noodles
green parsley

Wash the meat well and boil it in cold water with a little salt. Salt helps the foam to coagulate. As it forms, remove it with a whisk, so that the soup comes out as clear as possible. Wash and clean the vegetables. Cut them into thick slices and boil them with the gang. Cover the pot with a lid and simmer until the meat is well cooked and comes off the bone. Strain the soup, set aside the vegetables, remove the meat. Add to the noodle soup and the meat cut into very small pieces. Season with salt and add a little pepper, if desired. Sprinkle with chopped green parsley. Good appetite!

Whenever I think of my childhood with my grandparents, the taste of chicken noodle soup always comes to mind. So good and so warm. It reminds me of my grandmother from the country who, although she didn't have as many options as we have today, made the best cabbage leaf cabbage rolls, the tastiest cake and had the best meat to garnish. When I received the invitation and saw the theme, traditionally Romanian, the thought of the grandmother with rough hands, but so hardworking and skilled, escaped me.
