How to prepare pike caviar salad:

Put the eggs in a large bowl. First of all, we need to clean the skin cavities as well as possible. For this operation, I used a toothpick that I passed between the caviar, being careful not to break them, and the skins remained on it.
We start to add oil in a thin thread and mix very slowly, so as not to break the eggs. When the mixture starts to be milky, add half of the lemon juice, continue with the oil and the rest of the lemon. At the end, gradually add a tablespoon of mineral water, to obtain a fluffy salad, but also to eliminate the salty taste of the caviar.
If you want, add a small chopped onion. As you can see, mixing the caviar carefully keeps it whole.
