Recipe Gilded and fried eggplants of on 07-08-2007 [Updated on 07-06-2016]
There are many recipes to make with eggplants, I don't know what this recipe is called, which I think is a Neapolitan recipe, it is a type of eggplant that my grandmother makes and has always called them gilded and fried aubergines.
This preparation with aubergines at my house is a must in summer, easy to prepare and always appreciated by everyone you can fill them with the cheese, provolone or scamorza even if for me the perfect filling is that of the cheese because it ranks like no other: )
How to make browned and fried aubergines
Tick and peel the aubergines. Cut lengthwise slices about 3 mm thick.
Dip the aubergines in the flour.
Then in the beaten egg with a pinch of salt.
Fry the aubergines in a pan with hot oil, browning them on both sides.
Drain the aubergines from the oil and spread a small strip of sliced cheese or smoked cheese on one layer
Cover with another eggplant (trying to make them fit together).
Continue the operation as you fry the aubergines.
Serve the browned and fried aubergines hot.
